- 1 whole breast
- 3 medium onions
- 1 bell pepper
- 4 Eggs
- Mozzarella cheese, grated cheese or cream cheese
- Tapas or disks for empanadas.
To start we boil a whole or halved breast, along with a little salt, pepper and bay leaves. Meanwhile we are chopping an onion and a bell pepper. Once this is done we put it to cook over low heat.
When the chicken is cooked, we shred it, mix with the onion, the bell pepper, season with salt and pepper and pour a few tablespoons of the cooking water. We make four hard-boiled eggs and add to the mixture along with pieces of mozzarella cheese.
To finish, we assemble the empanadas and begin to fry them in a pot with oil.
